The gravlax salmon with passion fruits is a dish that is often requested so much in the formula diner cocktail or lunchtime in the full menus at home.
Ingredients for 10 people
- 1 salmon fillet 1,2 kg
- 200 g of large salt;
- 250 g of crystal sugar
- 1 large bouquetaneth
- 1 small handle of Pink berries – for my part the pink berries of https://sarabar.fr/
- 4 ffruits of passion
- 100 ml dfruity olive oil
Preparation 10 minutes – to be done on at least 2 or 3 days
Day 1
Disarm the salmon fillet.
Cut the salmon in 2 equal parts.
Place them in a large dish side by side.
In a container, mix salt, sugar, minced dill and crushed pink berries. I put this preparation in a large box and to mix well, I shake the box!
Fully cover the salmon of this mix. Film and refrigerate.
Day 2
Remove all liquid from the dish. Put the 2 shares of salmon One on the other, flesh against flesh, keeping the maximum salt-sugar mixture between the two parts. Film again and cool with a weight on it. Leave another few hours;
Day of tasting
Rinse the shares of salmon. With a knife gently scratch the flesh in order to completely remove the salt.
Detail sAlmon in thin slices with a very thin blade as we would for a smoked salmon.
Place it in a dish or plates separately.
Cut fruit of passion in half and with a small spoon empty the fruit and place its flesh and seeds on your salmon gravlax. To this add a good olive oil.
To finish
You can decorate this gravlax salmon with passion fruits with laneth, chives, pink berries..... but you can also serve it in small quantities in a verrine for one cocktail cocktail or aperitif.
