A remainder of rocket Who's starting to soak in the fridge? No, don't throw it away! Turn it into one Rocket pesto!

Ingredients

  • a salad bowl of rocket
  • 100 g sprockets
  • 100 g Parmesan grated
  • a glass ofolive oil
  • 5 cloves of garlic
  • Salt, pepper

Preparation: 10 minutes

Do roast gables 5 minutes in the oven at 200° on a plate. Let them cool.

Mix the arugula with half the olive oil, garlic, salt and pepper. Add the Parmesan and the gables. Depending on the desired consistency add the remaining olive oil.

Put in a clean pot (sterilized is even better!), put a little oil on top and store in a refrigerator. It can be kept for a few days. Each time it is used to do not oxidize, put a little oil on top.

Use

If you have made a focaccia (see previous article) Focaccia), you can brush it with this preparation. Otherwise do not hesitate to use on Pasta, fish, red as the recipe for Thousand leaves of tapenade and tian replacing the tapenade by the arugula pesto.
