Preparation 20 minutes, cooking about 1h30 to 2h, pause 45 minutes.
Ingredients for 6 people:
- 1 netbeef1.2 kg,
- 5 podsgarlic,
- Thym, rosemary,
- Sel andpepper of the mill,
- Butter
- Olive oil
Remove the fillet from the refrigerator, water with olive oil and place the herbs and leave it 45 minutes at room temperature
The net can be cracked for better cooking.
Preheat oven to 80° innatural convectionpreferably but also works inrotating heat(risk of drying a little).
In onecocoamelt butter and olive oil. Season with salt and pepper. On hot fire, do itroaston each side. Put back the peeled and crushed garlic herbs and pods. In the thickest part, plant asondeto follow thetemperature at heart. Bake at 80° until the core temperature according to your choice is:
- For oneblue cooking 50°
- For onestirring 55°
- For onecooking point 60°
- For onecook well cooked 70°/75°
If the net should be kept warm, it can remain in the oven set to the selected cooking temperature. For example, for onebleeding netOnce it is cooked, lower the oven from 80 to 55° and it can stay there for an hour without risk of overcooking.
